Bariatric Gelatin Recipe: The 3-Ingredient For Weight Loss

Recipe by Molina

This bariatric gelatin recipe is a carefully designed recovery tool built on protein science and stage-specific surgical awareness. It transforms plain gelatin into a high-protein, delicious snack that supports healing and avoids common post-op pitfalls.

  • Total Time1 hour 15 minutes
  • Yield4 servings 1x
  • DietGluten Free, Sugar Free

Ingredients

Scale
  • 1 box sugar-free gelatin mix (4-serving size) or 2 packets unflavored Knox gelatin plus stevia/monk fruit sweetener to taste
  • 1 cup boiling water (240ml)
  • 1 cup cold water (240ml)
  • 2 scoops collagen peptides (approximately 20g)
  • 1/8 teaspoon pink Himalayan salt

Instructions

  1. If using Knox gelatin, sprinkle it over 1/4 cup cold water and let bloom for 2 minutes.
  2. Pour 1 cup boiling water over the bloomed gelatin or directly over the sugar-free gelatin mix. Stir in a slow Z-motion for 2 minutes until fully dissolved.
  3. Add 1 cup cold water and stir briefly. Let the mixture cool for 15 minutes to below 140°F (the bowl should feel warm, not hot).
  4. Whisk in the collagen peptides using a Z-motion for 90 seconds.
  5. Add the pink Himalayan salt and stir gently to integrate.
  6. Refrigerate for a minimum of 4 hours, preferably overnight, until fully set.
  7. For a slushy variation: Pour the liquid mixture into a shallow dish, freeze for exactly 45 minutes, then pulse in a blender in 5-second bursts until slushy. Serve immediately.

Notes

Stage-specific notes: Stage 1 (full liquid diet): Use plain sugar-free gelatin only, no protein powder. Stage 2 (pureed/soft foods): Add 1 scoop collagen peptides per batch, ensure silky texture. Stage 3 (general bariatric diet): Full protein fortification is safe. Avoid maltitol, sorbitol, and mannitol in commercial gelatins. Container tips: Use individual glass jars for portion control.
