Instructions

  1. Place the potato chunks in a large pot and cover with cold water by 1 inch. Add 1 tablespoon of fine pink salt to the water.
  2. Bring to a boil over high heat, then reduce to a simmer. Cook for 15-20 minutes, or until the potatoes are fork-tender.
  3. Drain the potatoes thoroughly in a colander. Return the empty pot to the warm, turned-off stove for 1 minute to evaporate any residual moisture, then add the potatoes back.
  4. Mash the potatoes immediately using a potato ricer, food mill, or hand masher until smooth. Avoid using an electric mixer to prevent a gluey texture.
  5. Add the room-temperature butter to the hot potatoes and stir until fully melted and incorporated.
  6. Gradually pour in the warmed heavy cream or milk, stirring gently with a wooden spoon or rubber spatula after each addition until the mixture is smooth and creamy.
  7. Season with black pepper and taste. Adjust seasoning with a pinch more fine pink salt if needed.
