Three variations of gut-healing gelatin desserts inspired by Dr. Kellyann Petrucci. Includes Strawberry Basil Lime, Black Cherry Honey, and Orange Coconut Cream Parfait. Each delivers pasture-raised beef gelatin for gut lining support, skin elasticity, and joint health.

Ingredients

  • 2 tablespoons pasture-raised beef gelatin powder
  • 1/2 cup cold filtered water (for blooming)
  • 1 1/2 cups boiling water
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tablespoons raw honey (or 1 tbsp maple syrup or 15 drops liquid stevia for keto)
  • 1/2 cup fresh basil leaves, packed
  • 1 cup fresh strawberries, hulled and halved


Instructions

  1. Sprinkle gelatin over cold water in a small bowl. Let bloom for 3 minutes without stirring.
  2. Blend basil with 1/4 cup warm water for 30 seconds. Strain through a fine mesh sieve, discarding solids.
  3. Stir bloomed gelatin into boiling water for 2 minutes until fully dissolved.
  4. Add lime juice, honey, and basil essence. Stir to combine.
  5. Divide strawberries among 6 cups. Pour liquid over fruit.
  6. Refrigerate minimum 4 hours or overnight until set.
  7. Serve plain or topped with whipped coconut cream.

Notes

For a firm molded version, increase gelatin to 3 tablespoons. Do not substitute fresh kiwi, pineapple, mango, papaya, figs, or guava as they contain enzymes that prevent setting. Use canned versions of those fruits if desired. Store covered in refrigerator for 3 to 5 days. Do not freeze.
