Ingredients

  • 2 packets (14g total) unflavored grass-fed gelatin powder
  • 2 cups (480ml) boiling filtered water
  • 1 cup (240ml) cold water or unsweetened coconut water
  • 1 to 2 tsp fresh lemon juice
  • 10 to 15 drops liquid stevia, or 1 tsp raw honey (for less strict version)
  • 1/2 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • One small pinch of pink Himalayan salt


Instructions

  1. Pour boiling water into a medium mixing bowl. Sprinkle both gelatin packets evenly over the surface. Let bloom for 2 minutes without stirring.
  2. Whisk vigorously for 60 seconds until fully dissolved. No visible granules should remain.
  3. Add cold water, lemon juice, stevia, and the pinch of pink Himalayan salt. Whisk to combine.
  4. Taste and adjust sweetness. Pour the liquid into an 8x8 glass dish or silicone mold.
  5. Distribute berries evenly across the surface. They will suspend as the gelatin sets.
  6. Cover loosely and refrigerate for a minimum of 4 hours, overnight preferred.
  7. Slice into 4 equal portions and serve chilled.

Notes

Do not add fresh pineapple, kiwi, papaya, mango, or guava as they prevent setting. Use only cooked or canned versions of those fruits. For a keto-friendly version, replace cold water with full-fat coconut milk and add lime juice. Store in an airtight container in the refrigerator for up to 5 days. Do not freeze.
