Instructions

  1. Prepare the Salt Slurry: In a small bowl, combine the fresh lime juice and pink Himalayan salt. Stir until the salt is fully dissolved to create a slurry. This ensures even distribution.
  2. Blend the Base: In a blender, combine the watermelon chunks, the lime-salt slurry, simple syrup, and fresh basil leaves. Blend on high until completely smooth.
  3. Choose Your Texture: For a silky smooth cooler, strain the mixture through a fine-mesh sieve or nut milk bag into a pitcher. For a rustic, pulpy version, skip straining and pour directly into the pitcher.
  4. Chill and Serve: Fill serving glasses with ice cubes or frozen watermelon cubes. Pour the cooler over the ice. Garnish each glass with a slapped basil sprig, a watermelon wedge, and a lime wheel. Stir before drinking if separation occurs.

Notes

For best flavor, use a ripe, sweet watermelon. The cooler can be stored in a sealed container in the refrigerator for up to 48 hours; stir or shake before serving as natural separation will occur.
